You can make this recipe with barbequed chicken as well. Shred the barbequed chicken, removing the skin, then add it along with the other ingredients in step 4

Risotto doesn?t keep well so make sure you make the correct quantity so as not have any leftovers. Allow ? cup rice per person for main dish and ? cup for an entre.
