Beef Mushroom and Garlic Rice
Ingredients
2 cups (400g) SunRice White Calrose Medium Grain Rice
3 cups beef stock or water
2 Tbsp chopped fresh parsley
2 Tbsp oil
1 tsp crushed garlic
100g button mushrooms, halved
100g button mushrooms, halved
500g lean beef (rump, sirloin, fillet),cut into strips
4 green shallots, chopped
1? cups light sour cream
2 Tbsp Worcestershire sauce
2 Tbsp mustard (optional)

Methods/steps

Combine rice and stock in a large saucepan and bring to the boil
Reduce heat and simmer, covered, 12 minutes
Remove from heat, stir in parsley and stand, covered, while preparing meat

Heat oil in frypan over moderately high heat and cook mushrooms for 2 minutes, stirring continuously
Remove mushrooms and cook beef and garlic until lightly browned, 2-3 minutes

Reduce heat to moderate and add mushrooms and remaining ingredients to pan and heat through
Serve with rice

Additional Tips
Tip
Add 1-2 tablespoons tomato paste for richer flavour
