Beef One-Pot
Description
Tip
Spoon casserole over creamy potato mash. Lamb can also be substituted for the beef in the recipe.
Ingredients
500g diced Beef
200g bacon, diced
2 medium carrots, peeled and cut into large pieces
200ml red wine
200ml red wine
400ml beef liquid stock
200g button mushrooms, wiped clean of dirt
2 Tbsp olive oil

Methods/steps

Coat beef in oil
In a hot casserole pot, brown meat in 2 batches
Set aside

Brown bacon and return beef with carrots, red wine and stock
Bring to the boil covered

Stove top method:

Reduce heat to a simmer and cook covered for 1 hour

Add mushrooms and continue to cook for 30 minutes

Oven method:

Place in a pre heated 160?C oven for 45 minutes before adding mushrooms and continue to cook for a further 30 minutes
