Best Ever Chocolate Cake

Syrup

250 ml (1 cup) sugar
250 ml (1 cup) water
Cake
----
250 ml (1 cup) butter
125 ml (1/2 cup) sugar
200 g bittersweet chocolate
5 eggs
30 ml (2 tablespoons) brandy
250 ml (1 cup) cake flour
1,25 ml (1/4 teaspoon) salt
30 ml (2 tablespoons) baking powder
Topping
-------
200 g milk chocolate
15 ml (1 tablespoon) sunflower oil
Methods/steps
Preheat oven to 180 ?C (350 ?F)
Grease a 25cm loose-bottomed cake tin

Make the syrup
Bring the water and sugar to the boil and stir until the sugar is dissolved
Leave to cool

Melt butter, sugar and chocolate over boiling water

Pour into a mixing bowl and add the eggs, one at a time and beat well

Add bandy and beat well

Sift dry ingredients together and fold into the chocolate mixture
The dough is very soft

Pour dough into the prepared cake tin and bake for 40 to 45 minutes until firm

Pour the sugar syrup over immediately
Allow cake to cool in the tin

Make the topping
Melt the milk chocolate and sunflower oil over boiling water and mix until smooth

Turn the cake out onto a serving platter
Spoon the topping over the cake
