Ingredients
2kg prime Beef
1kg Pork
20g Coriander
2ml ground Cloves
2ml ground Nutmeg
30g fine Salt
5ml freshly ground Black Pepper
500g Bacon
100ml Vinegar
Casing (Pork casing is good)
1kg Pork
20g Coriander

Methods/steps
To prepare coriander: (15ml produces 5ml)

Place in dry pan, heat and stir until light brown

Grind, sieve to remove husk
Grind remainder to a fine powder
To make the sausage:

Cut meat into 25mm (1 inch) blocks

Mix the meat in with the herbs

Cut bacon into small blocks and mix it into the Pork, Beef and herb mixture
Mince all together
Do not mince it too fine - use the cutter that has holes ?? inch holes

Add the vinegar, mix, and mince a second time

Stuff the mixture into the casing, but be careful to not overstuff
