Chilli & Ginger Koeksusters

Chilli & Ginger Syrup
500ml water
1kg white sugar
1 Tbsp orange zest
thumb size piece of ginger in syrup, thinly cut
3 red chillies, finely sliced and deseeded
Koeksuster Dough
500ml cake flour
1 tsp salt
2 tsp baking powder
70ml butter
1 large free range egg
75ml milk
1 bottle sunflower oil for frying
Methods/steps
Chilli & Ginger Syrup

Bring water to the boil and all the ingredients

Boil together for 15min until syrup has formed

Set aside and allow to cool
Koeksuster Dough

Sieve the dry ingredients together

Rub the butter into the dry ingredients

Beat the egg and add the milk

Mix together with the flour

Allow to rest for an hour in the fridge
Roll out the dough on a well floured surface and cut into 8cm long strips

Press the ends of 3 pieces tightly together and begin plaiting making sure the ends are firmly pressed together

Deep fry the koeksusters in boiling hot oil till golden brown

Dip the koeksusters in the Chilli & Ginger syrup and allow to cool on a sheet of towelling roll
