Eggless Sweet Potato Casserole
Ingredients
6 sweet potato -- cooked, peeled and mashed
1/4 cup evaporated milk
1/4 cup orange juice
1 teaspoon vanilla extract
1/2 cup white sugar
1/2 teaspoon salt
3 tablespoons butter, melted
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/3 cup butter, melted
3/4 cup packed brown sugar
1/2 cup all-purpose flour
3/4 cup chopped pecans
1/4 cup evaporated milk
1/4 cup orange juice
1 teaspoon vanilla extract
1/2 cup white sugar
1/2 teaspoon salt
3 tablespoons butter, melted
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/3 cup butter, melted
3/4 cup packed brown sugar
1/2 cup all-purpose flour
3/4 cup chopped pecans
Methods/steps
Preheat oven to 350 degrees F (175 degrees C)
Grease one 2 quart casserole dish and set aside
Blend together the sweet potatoes, evaporated milk, orange juice, vanilla, sugar, salt, 3 tablespoons butter, nutmeg and cinnamon
Pour into prepared casserole dish
Prepare the topping by mixing together the 1/3 cup butter, brown sugar, flour and pecans
Sprinkle over casserole and bake for 45 minutes or until hot
Grease one 2 quart casserole dish and set aside
Blend together the sweet potatoes, evaporated milk, orange juice, vanilla, sugar, salt, 3 tablespoons butter, nutmeg and cinnamon
Pour into prepared casserole dish
