Upma (Semolina dish)
Description
This is a delightful south Indian breakfast speciality, which cooks fast and is equally nutritious
Ingredients
- Semolina (sooji) : 1 cup
- Water : 2 cups
- Oil : 3 tbsp
- Onions chopped : 1 large
- Green chillies Chopped : 3
- Ginger chopped : 1 tsp
- Mustard seeds : ½ tsp
- White gram (urad) : ½ tsp
- Curry leaves : 1 sprig
- Coriander leaves : 1 tbsp chopped
- Salt to taste
Methods/steps
- 1. Roast the semolina without oil, in a thick bottomed pan for about 3 minutes, stirring all the while, and remove on to a plate.
- 2. Heat oil, and splutter mustard seeds. Add in the white gram and curry leaves. Stir.
- 3. Add the chopped onions, green chillies, and ginger and fry well till the onion turns soft and pink.
- 4. Add the water, required salt, and wait till the water boils.
- 5. Drop in the roasted semolina, stirring all the time, so that no lumps are formed. Keep stirring all the while, till all the semolina is well blended in the water.
- 6. cover the pan for a minute, lowering the heat. When you remove the cover, you will find that the Upma has thickened and cooked. Sprinkle corrinander leaves and serve hot.

Additional Tips
You may add chopped vegetables like peas, carrot, potato, beans, etc to the onions, while they are being fried. Make as usual.
