Ven Pongal (Rice cooked with yellow green gram)
Description
This is an extremely nutritious and equally tasty, and usually had for breakfast in South India.
Ingredients
- Raw rice : 1 cup
- Split yellow green gram : ¼ cup
- cumin seeds : 1 tsp
- ginger chopped: 2 tsp
- green chilly chopped: 1 tsp
- curry leaves : 6-8
- cashewnuts : 1/3 cup
- peppercorns : 1 tbsp
- ghee : 3 tbsp
- salt to taste
- water : 3 cups
Methods/steps
- 1. Wash, and soak the yellow green gram dal and rice, separately for 15 minutes. Drain and keep aside.
- 2. Heat the ghee in a thick bottomed pan, and add the cumin seeds, peppercorns, and curry leaves. Stir for a moment, and add in the chopped ginger and green chillies and fry for another minute.
- 3. Add the soaked yellow split green gram dal and stir fry for about 4 minutes.
- 4. Add the soaked rice and stir fry for another 2 minutes.
- 5. Add the water and salt, and bring to a boil. Lower the flame and cover and cook till done. It should be a bit mashed and squishy.
- 6. Heat a tablespoon of ghee in another pan and fry the cashewnuts till golden brown. Add it to the Pongal.
- 7. Serve hot with Sambar or chutney or Avial.
