Ingredients

  • 3/4 lb. lean ground beef
  • 2 cloves garlic
  • 1/2 c. picante sauce
  • 8 oz. can tomatoes, drained and chopped
  • 16 oz. can black or pinto beans, rinsed and drained
  • 8 oz. can whole kernel corn, drained
  • 2 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/3 c. sliced green onions
  • 12 flour tortillas
  • 1 c. picante sauce
  • 1 c. shredded cheese

Method

  1. Brown

  2. ground beef with

  3. minced

  4. garlic.

  5. Add

  6. 1/2

  7. cup picante sauce, tomatoes, beans,

  8. corn, cumin and chili powder. Mix well.

  9. Cook, uncovered,

  10. stirring

  11. frequently 5 minutes or until most

  12. of the

  13. liquid

  14. has

  15. evaporated.

  16. Stir

  17. in

  18. green onions. Spoon about 1/3 cup

  19. of

  20. mixture

  21. down

  22. the center of each flour tortilla; roll up. Place

  23. seam-side

  24. down in 13 x 9-inch baking dish sprayed

  25. with vegetable spray.

  26. Spoon 1 cup picante sauce evenly over

  27. enchiladas.

  28. Bake, covered, at 350° for 15 minutes or until

  29. hot.

  30. Top

  31. with

  32. cheese and return to oven 3 minutes or until cheese melts.

  33. Top with sour cream and additional picante sauce, if desired.
