Bill'S Chicken Salad

A home-kitchen version of bill's chicken salad, written step by step so it's easy to follow built around good chicken and pantry staples.

Ingredients
- 1 frying chicken (about 2 1/2 to 3 lb.)
- 1 c. sweet pickle relish
- 1 1/2 c. Miracle Whip or mayonnaise
- 2 large eggs, hard-boiled and chopped
- 1/2 c. fresh onion, minced or finely chopped
- 1/4 c. chopped celery
- 2 Tbsp. dried parsley flakes
- 1/4 tsp. black pepper
- 2 tsp. salad style mustard
- 1 Tbsp. Cavender's all-purpose Greek seasoning
- 1/4 c. chicken broth
Method
Boil the chicken until completely tender (about an hour). Reserve about 1/4 cup of the broth.
Remove the chicken from the pot and allow to cool completely, then skin, bone, and dice or chop very small.
Mix ingredients well in a bowl that can be sealed airtight.
Seal and refrigerate at least four hours for flavors to blend.
