Bill'S Chicken Salad

Ingredients

  • 1 frying chicken (about 2 1/2 to 3 lb.)
  • 1 c. sweet pickle relish
  • 1 1/2 c. Miracle Whip or mayonnaise
  • 2 large eggs, hard-boiled and chopped
  • 1/2 c. fresh onion, minced or finely chopped
  • 1/4 c. chopped celery
  • 2 Tbsp. dried parsley flakes
  • 1/4 tsp. black pepper
  • 2 tsp. salad style mustard
  • 1 Tbsp. Cavender's all-purpose Greek seasoning
  • 1/4 c. chicken broth

Method

  1. Boil the chicken until completely tender (about an hour). Reserve about 1/4 cup of the broth.

  2. Remove the chicken from the pot and allow to cool completely, then skin, bone, and dice or chop very small.

  3. Mix ingredients well in a bowl that can be sealed airtight.

  4. Seal and refrigerate at least four hours for flavors to blend.
