Ingredients

  • 1 c. dry black-eyed peas
  • 6 c. water
  • 6 slices bacon, cut up or ham or jowl
  • 4 c. water
  • 3/4 c. chopped onion
  • 1 stalk celery, chopped
  • 1 1/2 tsp. salt
  • 3/4 tsp. red pepper
  • 1 c. long grain rice

Method

  1. Rinse dry peas.

  2. In a large pot, combine peas and 6 cups water. Bring to boiling.

  3. Simmer 2 minutes.

  4. Remove from heat.

  5. Cover; let stand 1 hour.

  6. Drain peas and rinse.

  7. Cook bacon until crisp (or what meat you use).

  8. Drain, reserving 3 tablespoons fat.

  9. Add peas, 4 cups water, onion, celery, salt and pepper.

  10. Reduce heat, simmer 30 minutes.

  11. Add uncooked rice.

  12. Simmer 20 minutes more or until tender.

  13. Makes 8 servings.
