A home-kitchen version of eggplant oysters, written step by step so it's easy to follow that comes together with everyday ingredients.
Ingredients
- 1 medium eggplant
- 10 whole crackers, crumbled
- 1 large egg
- 1/2 tsp. pepper
- 1/4 c. Bisquick mix
Method
Peel eggplant and cover with water; boil until tender.
Drain and cool.
Add egg and pepper and mix well.
Add Bisquick mix. Drop mixture into deep hot fat (oil) until brown.
