Fluffy Banana Cake

A home-kitchen version of fluffy banana cake, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 1 heaping c. bananas, mashed
- 2 c. flour
- 1/2 tsp. baking powder
- 3/4 tsp. soda
- 1/2 tsp. salt
- 1/2 c. shortening (soft)
- 1 1/2 c. sugar
- 2 eggs (unbeaten)
- 1 tsp. vanilla
- 1/4 c. buttermilk or sour milk
Method
Sift together flour, baking powder, soda and salt.
Mix in a large bowl the shortening, sugar, unbeaten eggs and vanilla.
Beat for 1 1/2 minutes; add buttermilk or sour milk.
Add flour mixture with mashed bananas.
Bake at 350°.
