Ingredients

  • 1 lb. butter
  • 9 eggs, separated
  • 3/4 tsp. cloves (ground)
  • 3/4 tsp. mace
  • 1 tsp. baking soda
  • 1 lb. currants
  • 1 lb. nuts (pecans)
  • 1/2 lb. candied orange peel
  • 1/2 lb. candied cherries
  • 1 lb. candied pineapple
  • 1/2 tsp. ???
  • 1 lb. light brown sugar
  • 1 lb. flour (all-purpose)
  • 3/4 tsp. nutmeg
  • 2 tsp. cinnamon
  • 1/4 c. milk
  • 1 lb. seedless raisins
  • 1/2 lb. citron

Method

  1. Wash raisins and currants; chop nuts and fruits.

  2. Dredge fruit in half the flour.

  3. Cream butter and sugar.

  4. Add beaten egg yolks. Sift remaining flour with other dry ingredients.

  5. Add milk and dry ingredients alternately to cake batter.

  6. Fold in stiffly beaten egg whites.

  7. Add nuts and fruits; mix thoroughly.

  8. Bake approximately 4 hours at 275°.
