Neapolitan Pork Chops

A mediterranean take on neapolitan pork chops, written step by step so it's easy to follow built around good beef and pantry staples.

Ingredients
- 2 Tbsp. olive oil
- 1 clove garlic, minced
- 6 pork rib or loin chops (cut about 3/4 to 1-inch thick)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 lb. mushrooms, cleaned and sliced
- 2 green peppers, cleaned and chopped
- 1/2 c. canned tomatoes, sieved
- 3 Tbsp. dry white wine
Method
Heat oil in a large heavy skillet.
Add garlic and cook until lightly browned.
Season chops with salt and pepper.
Put chops in skillet and brown on both sides.
Add mushrooms, green pepper, sieved tomatoes and wine.
Cover and cook over low heat about 1 hour or until tender.
Makes 6 servings.
