Ingredients

  • 1 pt. clams (Bay quahaugs)
  • 1/4 c. salt pork or bacon, chopped
  • 1/4 c. chopped onion
  • 1/2 tsp. salt
  • dash of pepper
  • 1 c. clam liquor (add water to make 1 c.)
  • 1 c. diced potatoes
  • 2 c. milk
  • parsley for garnish

Method

  1. Drain clams; save liquor and chop.

  2. Fry salt pork or bacon until lightly brown.

  3. Add onion and cook until tender.

  4. Add liquor, potatoes and seasonings.

  5. Cook 15 minutes until potatoes are tender.

  6. Add milk and heat thoroughly.

  7. Stir in chopped clams and warm gently 2 to 5 minutes.

  8. Garnish with parsley.
