Oatmeal Raisin Cookies

A home-kitchen version of oatmeal raisin cookies, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 1 1/4 c. packed brown sugar
- 1/2 c. vegetable oil
- 1/4 c. margarine
- 1/4 c. water
- 1 egg
- 1 1/2 tsp. vanilla
- 3 c. uncooked quick-cooking oats
- 1 c. all-purpose flour
- 1/2 c. flaked coconut
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. raisins
- 1/2 c. chopped nuts
- 1 tsp. cinnamon
Method
In large mixing bowl, combine oil, margarine, water, egg and vanilla.
Beat at medium speed of mixer until well blended.
Add sugar, oats, flour, coconut, baking soda, cinnamon and salt.
Beat at low speed until soft dough forms; stir in raisins and nuts. Drop by heaping teaspoonfuls, 2-inches apart, on lightly greased cookie sheets.
Bake 8 to 10 minutes at 350°.
