Papaya Salsa & Brie With Tortilla Wedges

A mexican take on papaya salsa & brie with tortilla wedges, written step by step so it's easy to follow that's worth the oven time.

Ingredients
- 8 Flour Tortillas
- 3 c. Ripe Papaya, peeled and diced
- 3/4 c. Kiwi Fruit, peeled and diced
- 2 Tbsp. Red Bell Pepper, chopped
- 1 1/2 Tbsp. Shallots, Chopped
- 1 1/2 Tbsp. Fresh Cilantro, chopped
- 1 1/2 Tbsp. Lime Juice
- 1/8 tsp. Ground Allspice
- 4 oz. Round Brie or 8 oz. En Croute
Method
Cut enough tortillas into wedges (like pie) and bake at 350° for 10 minutes, until crisp, then set aside.
Combine the papaya and the next 6 ingredients.
Set aside.
Place the Brie on a baking sheet.
Bake for 10 minutes at 350° until thoroughly heated.
Dip the chips made from the tortillas in the fruity salsa and accompany it with a chunk of warmed cheese.
