Quick Mix Cake

A home-kitchen version of quick mix cake, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 2 1/2 c. plain flour
- 1 1/2 c. sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 1/2 c. Crisco
- 1 c. sweet milk
- 1 tsp. vanilla
- 2 eggs
Method
Grease and flour two 9 1/2-inch cake pans.
Sift together flour, sugar, baking powder and salt into a large mixing bowl. Add shortening, 2/3 of the milk and vanilla.
Mix at low speed until dry ingredients are dampened.
Beat at medium speed for 2 minutes.
Add the 1/3 milk and eggs.
Beat at low speed until mixed well, then beat on medium speed for 2 minutes.
Pour in pans.
Bake at 375° about 25 minutes.
