Ingredients

  • 16 small fresh link pork sausages (approximately 1 lb.)
  • 1/2 medium green pepper, chopped
  • 1/2 medium sweet red pepper, chopped
  • 1 Tbsp. cooking oil
  • 3 c. cooked long grain rice
  • 2 Tbsp. chopped fresh parsley
  • 1 tsp. dried basil
  • 4 to 5 medium tomatoes, peeled and chopped
  • 1 (10 oz.) pkg. frozen corn, thawed
  • 1 c. (4 oz.) shredded Cheddar cheese
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • 1 c. soft bread crumbs
  • 2 Tbsp. butter or margarine, melted

Method

  1. Place sausages on a rack in a baking pan.

  2. Bake at 350° for 15 minutes or until lightly browned. Cut into 1-inch pieces.

  3. Set aside.

  4. In a skillet, saute peppers in oil for 3 minutes. Place in 3-quart casserole.

  5. Add the sausages and the next 8 ingredients. Combine bread crumbs and butter. Sprinkle on top of casserole. Bake, uncovered, at 350° for 30 to 40 minutes or until heated through.

  6. Yields 6 to 8 servings.
