Sky High Lemon Pie

A home-kitchen version of sky high lemon pie, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 1 3/4 c. sugar
- 1/4 c. corn starch
- 1/4 c. All Purpose flour
- 1/4 tsp. salt
- 2 c. water
- 4 egg yolks
- 2 Tbsp. lemon juice or (real lemon juice)
- 2 Tbsp. butter or margarine
- 1/4 tsp. lemon extract
- 1 9in. baked pie shell
Method
Cook over medium heat until thick.
Set into cold water when thick enough.
Add butter and flavoring.
Cool slightly and pour in baked shell.
Top with favorite meringue and brown under broiler.
Cool.
