Snow Pie

A home-kitchen version of snow pie, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 3/4 c. pineapple juice
- water (enough to make 1 1/2 c.)
- 2 Tbsp. lemon juice
- 1 c. sugar
- 4 Tbsp. cornstarch
- 3 egg whites, beaten stiff
Method
Cook the mixture in double boiler until thick and creamy. After it has slightly cooled, add stiff egg whites.
Beat vigorously.
Place in baked pie shell.
Top with whip cream.
