Mock Apple Rings

A home-kitchen version of mock apple rings, written step by step so it's easy to follow that comes together with everyday ingredients.
Ingredients
- 7 lb. large cucumbers, peeled, seeded and cut in rings
- 1 c. lime to 1 gal. water
- 3 c. vinegar
- 1 bottle red food coloring
- 5 lb. sugar
- 1 (2 1/2 oz.) pkg. cinnamon red hots (1/3 c.)
- 8 cinnamon sticks
- 1 Tbsp. alum
Method
Soak cucumbers in lime water overnight.
Wash 3 times and soak for 3 hours in cold water.
Drain.
