Ingredients

  • 4 chicken breast halves, skin removed (sprinkle with paprika)
  • 8 small new potatoes
  • 4 medium size carrots
  • 2 c. chicken broth (fat removed)
  • salt and pepper to taste
  • 1/2 lb. fresh green beans or 1 (16 oz.) can green beans, drained

Method

  1. Wash potatoes, but do not peel.

  2. Cut in half and place, cut side up, in a 9 x 13-inch pan sprayed with vegetable cooking spray. Cut carrots in half and scatter among potatoes. Pour broth over vegetables.

  3. Place chicken on top.

  4. Sprinkle with salt and coarsely ground black pepper. Cover with foil.

  5. Bake at 325° for 60 minutes. Add green beans to dish. Bake 15 minutes or until beans are heated through.

  6. Makes 4 servings.

  7. Contains 377 calories, 4 g fat and 66 mg cholesterol.
