Potato Cake

A home-kitchen version of potato cake, written step by step so it's easy to follow that's worth the oven time.
Ingredients
- 1 c. margarine
- 2 c. sugar
- 4 eggs
- 2/3 c. milk
- 1 c. hot mashed potatoes
- 2 c. flour
- 4 Tbsp. cocoa
- 2 Tbsp. baking powder
- 1/2 tsp. salt
- 1 tsp. each clove; cinnamon; nutmeg
- 1 c. chopped pecans
- 1 tsp. vanilla
- powdered sugar
Method
Combine all dry ingredients and set aside.
Cream together margarine, sugar and eggs.
Add milk and potatoes.
Add dry ingredients a little at a time.
Add vanilla and chopped pecans. Bake in greased Bundt pan at 350° for 1 hour.
Sprinkle with powdered sugar when cool.
