Ingredients
- 3 eggs
- 1 1/2 c. sugar
- 1 stick softened butter
- 1 small can crushed pineapple
- 3 c. grated sweet potatoes
Method
Combine eggs, sugar and butter in a bowl. Mix well. Stir in pineapple and sweet potatoes. Pour into greased casserole dish. Bake at 350° for 40 minutes or until potatoes are tender.
