A mexican take on zucchini casserole, written step by step so it's easy to follow built around good cheese and pantry staples.
Ingredients
- 4 to 5 medium zucchini, chopped
- 1 medium onion, chopped
- 1 (8 oz.) Monterey Jack cheese with jalapeno, chopped
- 3 eggs, beaten
- 1/3 c. Mazola oil
Method
Mix all ingredients together.
Bake in greased casserole dish at 350° until golden brown.
